Its very hard to get an egg less cake in USA. As now Navratra is going
on... lots of people prefer eating pure veg, so i thought of making this
purely vegetarian cake. This is the first egg less cake that i prepared
at home.
Usually i make cakes with the eggs, but this time i made this without using egg and i added lots of fruits to make it more delicious and finally it turned out very well.
Method:
You can also use dry fruits.
You can use sugar instead of condensed milk.

Ingredients:
All Purpose Flour 2 1/2 cups
Butter melted/Oil 1 cup
Milk 1/2 cup
Sweetened Condensed Milk 1 can( 14 oz)
Baking Powder 2 tsp
Baking Soda 1tsp
Pineapple Chunks 1 can
Pineapple juice 1cup(used from the can of pineapple chunks)
Strawberries 5
Kiwi 1
Cool Whip 1 box (8 oz)
Sift the flour together with the baking powder and baking soda.
In a big Bowl, take flour, add melted butter, condensed milk and mix them together.
Then add the milk and mix well so that there are no lumps..
Now preheat the oven for 10 mins at 350 degree F.
Take a 9" round pan and grease it with oil n put some flour and pour half of the mixture.
Bake it for 20-25 minutes. Check it pricking a toothpick in the middle. If it comes out clean then its done .
If not then bake for 5 more mins.
Transfer it on a plate and allow it to cool.
Repeat the process for second cake and allow it to cool.
Take 1st sponge cake and pour some pineapple juice and then spread the cream.
Put the pineaaple chunks and cut strawberries.
Now take the 2nd sponge cake and pour the remaining pineapple juice and put it on the top of the 1st one.
Now cover it with the cream from the top and the sides.
Decorate with some kiwi, pineapple , grapes and strawberries.
Tips:
You can use any juice and any fruit according to your choice.You can also use dry fruits.
